Frankfurter Kranz
Birthdays in Germany are a pretty big deal. My mother-in-laws phone rang off the hook all day long on top of the 20 or so quest who showed up for birthday cake, a glass of champagne, and coffee. Also, do you notice something in the photo above. Not one cake but 4!!! I thought I would share the recipe for the Frankfurter Kranz. It was really yummy!
Frankfurter Kranz.
you will need a bundt pan for this recipe of a spring form pan.
Cake batter:
6 eggs
1/2 cup warm water
1 and 3/4 cups sugar
2 3/4 cups flour
2 teaspoons of baking powder
1 stick of butter
Cream together butter and sugar. Then add eggs and water. Slowly add flour and baking powder. Spray the pan you selected or butter and flour it as not to stick. Add batter. Bake at 350 degrees for 40 minutes or until set. Let cool completely or you will not be able to cut it.
Whil the cake is baking make the butter frosting by combining one package of vanilla pudding, 1/2 cup f sugar, 2 1/2 cups of cold milk and 2 sticks of butter. Set aside.
Make Krokant for topping g by combining 1 teaspoon butter with 1 tablespoon of sugar and 4 ounces of chopped almonds and place on a baking sheet at about 250 degrees for a couple of minutes until toasted brown. Make sure they don't burn.
Once cake is cooled. cut cake into three layers with a serrated knife. If you choose the spring form pan use a small glass to cut out the circle in the middle.
Now it is time to decorate the cake. Spread jam of choice on the inside of the two top layers. Then add frosting on top of that. Assemble cake and frost the outside. Decorate with the Krokant topping. Enjoy and eat!
