Tomato Tart a Recipe for All Occasions


This time of year while fun is busy and I recently found this recipe for Tomato Tart to be perfect for a light dinner or a snack when friends come knocking on the door,  You can't go wrong when there is puff pastry in the recipe. So light, buttery, and flaky!  You will need 1 sheet of puff pastry, three plum tomatoes, salt, pepper, 1 cup of Gruyere Cheese, 1 teaspoon of thyme, and 2 slices of cooked bacon.
Defrost puff pastry and roll out to be 10 inches by 14 inches,  In the center sprinkle cheese then sliced tomatoes then sprinkle with salt, pepper, thyme, and chopped bacon.,  Fold in the sides and with the egg mix with a splash of water to make an egg wash and brush on the edges of the pastry.  Bake at 425 degrees for 20 to 25 minutes until pastry is cooked and golden brown. Perfect by itself or with a side salad servings depends on the size of the slice but serves approximately 8 people.
