This time of year while fun is busy and I recently found this recipe for Tomato Tart to be perfect for a light dinner or a snack when friends come knocking on the door, You can't go wrong when there is puff pastry in the recipe. So light, buttery, and flaky,
You will need 1 sheet of puff , three plum tomatoes, salt, pepper, 1 cup of Gruyere Cheese, 1 teaspoon of thyme, and 2 slices of cooked bacon.
Defrost puff pastry and roll out to be 10 inches by 14 inches, In the center sprinkle cheese then slice tomatoes and spread out sprinkle with salt, pepper, thyme and chopped bacon., Fold in the sides and with egg and a splash of water make an egg wash and brush on the edges of the pastry. Bake at 425 degrees for 20 to 25 minutes until pastry is cooked and golden brown.
Perfect by itself or with a side salad servings depend on the size of the slice but serves approxiately 8 people.
