Last thing I learned "cornerview" Pumpkin Whoopie Pies

The last thing I learned is that pumpkin whoopie pies with maple cream cheese frosting are amazing!
You begin making these yummy treats with two sticks of butter or 1 cup, then add two eggs, 2 cups of brown sugar and 1 can or 15 ounces of pumpkin puree, and 1 teaspoon of vanilla. To that add 2 teaspoons of cinnamon, 1 teaspoon of cloves, 1 teaspoon of nutmeg, and 1 teaspoon of salt.  Then add 1 teaspoon of baking powder and 1 teaspoon baking soda.  Once combined add three cups of flour. 
Scoop out dough with a small ice cream scoop on parchment lined cookie sheets. Bake at 350 degrees for 16 minutes.  Should make about 14 generous sized pies.  Scoop smaller and make smaller pies.  Unless you are going to a function, I would suggest cutting a recipe in half.  These are very rich! Plus once you have one you will want another. 
Now once cooled.  Cream 4 ounces of cream cheese with 4 ounces of butter and add 1 teaspoon of maple extract or maple syrup.  Assemble pies!  So yummy!

Uggg! You would have to post this when I'm trying to diet and have barely soup for lunch. :) Maybe I'll change the diet to pumpkin cookies. Pumpkins are vegetables and then their is the cream cheese to get my calcium right. . .what???

I will definitely be making these. For the kids...what??? :)
