Coffee Cake!


This recipe has to be the best recipe I have found for Coffee cake. The dough is moist and not overly sweet and the crumble is generous. I have been making this cake for years with rave reviews. The recipe comes from Martha Stewart via her good friend Sara Foster who is also the owner of Fosters Market in Chapel Hill, North Carolina. I have also been to this market/cafe and the food was excellent.

Coffee Cake
2 Tablespoons of oil
1/2 cup milk
1 1/2 cups flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 large egg
1/2 cup sugar

First mix all wet ingredients then add sugar and then slowly add in flour and other dry ingredients. Place batter in a greased square baking pan. Then mix crumble
1 cup brown sugar
1 cup or two sticks of butter
1 1/2 teaspoons of cinnamon
2 1/2 cups flour
2 teaspoons of vanilla extract

Mix ingredients together until forms a crumble like consistency. Place on top of the other batter in clumps around the surface top of the cake. It will seem like a lot, but use up all the crumble. Bake at 350 degree for 20 minutes or until a cake tester comes out clean. Should look golden brown. For an additional effect you can dust top with powder sugar. However, is just as yummy without. Enjoy!
