Chicken Cacciatore

Chicken Cacciatore
3 1/2 pounds of chicken pieces with skin on
2 Tablespoon olive oil
1 Tablespoon of minced garlic
1 medium onion diced
1 yellow pepper diced
1 orange pepper diced
1 cup of sliced mushrooms
salt and pepper to taste
2 cups of chopped tomatoes
1/3 cup chicken stock or white wine
In a large skillet saute onions and peppers in oil until onions are translucent. Add chicken with the skin side facing down and brown. Salt and pepper to taste. Add garlic, tomatoes, and stock and simmer on medium low heat for approximately 40 minutes. Chicken should be cooked all the way through and be almost falling off the bone. Serve over rice. This dish is like taking a trip to Northern Italy. My boys love this dish. You can even add carrot if you like.
