Walnut Honey Cake

Fall came in like a lion and there is no denying it. It seems like the temperatures have dropped over night considerably and the trees are now starting to show hints of gold and maroon.  I am currently shopping for long johns as fall is definitely much different here in Germany than it is back home in Atlanta. I wasn't expecting it to be the same as it is still 85 degrees in Atlanta, but I was looking forward to at least a couple of weeks of 70 degree weather where one could put on a pair of jeans and a t-shirt and call it good. I think layers and long johns is going to be the key to surviving this winter. I am such a wimp and it is beyond funny because I grew up in Alaska. Anyway, did you have a good weekend? We did! We went to Saalburg and Hanau, but since this post is about Walnut Cake I will tell you more about those places later this week. Do you ever test a recipe before you take it to someones house or serve it to quest? I do! At the end of this month we are going to go to dinner at my husbands boss house and I want to bring a dessert. The recipe for this cake comes from my friend Tina who is totally amazing as she is not only a mom to three beautiful children, she is also a real estate agent, house flipper, runs her own on-line store for her finds at flee market and antique stores, photographer, and designer.  As she states in her post here, she used pecans as she now lives in south; however, I stuck with using Walnuts as the original recipe call for because they are much easier to find here in Germany. The cake is lovely and is a perfect fall recipe.




Walnut Cake

2 eggs, 1/2 cup of vegetable oil 3/4 cup of sugar and 1/2 cup of milk or almond milk
Combine ingredients than in a separate bowl add 2 teaspoons of baking powder, 1 cup of flour, 1/4 teaspoon baking soda with 1/2 teaspoon of cinnamon. I added more cinnamon as I love the flavor so you can add more if you want. Than add 1/2 cup of walnuts. Add to the wet ingredients to the dry and than grease and flour a bundt pan or as is called for in the original recipe use a spring form pan. Bake at 350 degrees for up to 30 minutes or until dry in the center. In a separate pan combine a 1/2 cup of honey, 1/2 cup of water, 3Tablespoons of lemon juice, and the zest of one lemon.  In a sauce pan combine the ingredients and bring to a boil. Boil for 5 minutes the syrup with start to thicken.  Once the cake is cooled poor over the top and dress the cake with additional chopped nuts.  Perfect with a scoop of ice cream or a side of whip cream.  The recipe is super easy to make! Enjoy!

Sounds fantastic with either walnuts or pecans. Walnuts remind me of fall so much. I'd think you'd have some kind of fall, that's too bad but you still live in a beautiful place; funny ur from Alaska. I always thought I could survive any winter being from WI (there are a LOT of Germans here) but spending time in Minnesota made me rethink that.
Yes, if it's for a bunch of people especially for a holiday I'll do a test run if I have the time.
