Birthday Wishes!

Look what was in my e-mail box today. Isn't she sweet!  I just want to wrap her in my arms and kiss all over that sweet face and tell her how much I love her that she is loved and wanted. When you have approval for your child you are allowed to send a care package to them.  Avery's birthday was a perfect opportunity to do that and we used a fantastic company called Red Threads.  Anna is so helpful and goes the extra miles to make sure you are happy with her service.  It is my understand that the birthdays are not normally celebrated in Chinese orphanages, so this  most likely was her first celebration.    All in all we received about 25 photos!  It was exactly what this impatient mama needed. I think the Lord is trying to teach me a lesson on patience as I wait for LOA.  We were really hoping this document would come this week.  Still two more days, but if we don't get it by Friday, then I am afraid we will not be going to China until Mid-January.  Given my husbands work schedule he may not be able to go with us if it doesn't happen by the end of the year.  Please pray this baby home.Thankfully, this will be her last birthday not in our arms.

Pumpkin Chocolate Chip Cookies

It is just beginning to feel like fall here in Georgia as the temperatures are cooler today, but I suspect it will be a few more weeks before the leaves begin to change colors. I don't know about you, but as soon as September rolls around I begin craving roast, apple sauce, and pumpkin and when I mean pumpkin I mean anything made with pumpkin in it! I don't know if there is any where in the world that has such a love affair with pumpkin as we Americans have. When I first heard about these cookies, I wasn't so sold on the idea. I mean pumpkin and chocolate chips? I reluctantly reached out my hand to the plate that was offering them and gave them a try. They were delicious! I think they have to be healthier too since they don't use as much butter and sugar as a traditional chocolate chip cookie. Now I just need to convince my children to give them a try when they get home from school.

Pumpkin Chocolate Chip Cookies

1 egg
3/4 cup of softened butter
1/2 cup sugar
1 cup of brown sugar
1 teaspoon of vanilla
1 cup of pumpkin puree
1teaspoon of baking soda
1 teaspoon of cinnamon
1/8 teaspoon of nutmeg
1/8 teaspoon of cloves
1/4 teaspoon ginger
2 1/2 cups of flour
1 1/2 cups of chocolate chips

In a bowl, combine butter and sugar than add the pumpkin, egg, and vanilla.  In a separate bowl shift flour, cinnamon, cloves, nutmeg, and baking soda together than combine.  Add chocolate chips.  With a ice cream scoop out ball of dough until a cookie sheet and with the back end of the scoop slightly flatten the dough  just a little bit.  Preheat oven to 300 degrees and bake until golden brown or firm about 10 minutes.  Allow to slightly cool before removing from pan as these are really soft cookies.

At The Lake

Each year our church congregation gathers for a campout at the Lake!  This year was my year to sleep over.  Roman and Addy went home at the end of the evening leaving Harris and Winston.  The kids always have so much fun.  As for me, I have decided next time it's either a air mattress or a RV because I am just getting to old to sleep on the ground.  Some of the campout activities included a Dutch Oven desert cook off, a 1 mile race, a movie under the stars, smore's, swimming, lots of talking with good friends, and a pancake breakfast.  Till next year!

Kelly, Adam, and Me

I believe Birthday girls get to celebrate all week long, so last night I went with my friend Lucy to see Maroon 5 and Kelly Clarkson.  It was so awesome.  We are not only celebratig my birthday this week, but Avery's.  She will be two!  We sent a cake and requested photos, so hopefully, we will have new photos to show you.  I am so excited.  We also got great news that she was transfered to a different orphange where she can get more individualized cae.  Yahoo!  So close!  Have a great day!

It's soccer time!

In keeping it real so that you don't think that I have a life of butterflies, unicorns, and rainbows, the weekend didn't turn out quite the way I expected.  See I have a child who is making some wrong choices right now.  He is having a hard time with understanding that too much of a good thing can be bad for you.  He is addicted to computer gaming.  It is kind of embaressing because as his parent I should have put the limits on it; however, it isn't that simple when you have a child who is strong willed and rufuses the guide lines we set for him and our family.  Taking away the computer isn't a simple thing when so much of his homework relies on the computer.  Anyway, it kind of came to a head this weekend and we had to put our foot down.  We are praying that our new approach will work, but who knows.  It has become his life and so I am thinking it may get uglier before it gets better.

On another note, last year was Winston's first year of playing soccer.  Due to our commitment with German school we were not able to participate in many sports because the games were on Saturdays. Anyway, he played on a team through the YMCA.  Unfortanately, he did not have a very good coach. They lost every game and while winning isn't the most important thing it is nice to win at least one game.  Winston loves soccer.  This year I did some research and I have him playing through another league were the coaches have a lot more experience and understanding of the game.  What a difference it has made. Winston won his second game of the season 9-0.

On another note, we are waiting for LOA in this process of adopting.  This document is the official aggrement between us and the Chinese government that we are prusueing Sun Xin Jing (Avery).  We really need to get this document soon if we have an hope of traveling by the end of the year.  So, I am asking you if you could please pray that we will get this document asap.  Would love also a prayer for my son that he will understand that we love him and only care about his future.  How was your weekend?

Happy Weekend!

Yesterday, I woke up so happy.  The weather is perfect right now.  Hot but not too hot and almost a little balmy.   It is exactly what I need after a long summer of rain. The air smelt of toast and fresh cut grass.  I couldn't drink enough of it in.  I am feeling pretty optimistic at the moment.  A good way to start a birthday.  It is on Tuesday!  I am so excited because on Monday night I am going to see Kelly Clarkson and Maroon 5.  On Tuesday, I am going to go the art museum with my mom and out to lunch.  Also, other good news is that in October I am going to go to New York City for two days with a good friend of mine.  Yahoo!  Well, I hope you have a really great weekend!  I will be on the soccer field.  How about you?  Do you have anything planned?

What's for Lunch? Corner View

Nothing was for lunch today as Addy had an appointment with the cardiologist today.  These appointments run about two hours long.  Her heart is doing well.  She still has a tiny hole in it, but at the moment it is not causing any problems.  Afterwards we had to run to the grocery store as I was out of milk, lunchbox supplies, and a few items for tonight's dinner.  Since Winston has soccer tonight and it would be to late to cook dinner when I got home, I made dinner early and that became my lunch.  I made Trinidadian Chicken Stew.  It was pretty good.  Now I just need the verdict from the rest of the amily as to whether it reappears in our nightly menu mix.  In Germany lunch is more like dinner and dinner is more like lunch.  So, my husband usually has his big meals at lunch time.  I guess some habits don't die easily.   What did you have for lunch?  To see more lunches around the world visit Francesca. Hello Monday!

Hello Monday!  Hi!  How are you?  I hope you had a great weekend.  We did!  Winston and Roman played their first soccer games of the season.  Winston's team won 7-2 and he was beaming from ear to ear all weekend long.  Roman's team lost 3-2, but he didn't care because he was just so happy to be playing.  He has gotten so much better this year.  Last year he would just kind of stand there and this year he really goes after the ball.  Then I was driving and I saw this field of sunflowers.  I just had to stop and take photos.  What a nice surprise!  I love sunflowers!  They make me so happy!  Did you know that the pioneers used  sunflowers to mark the trails as they traveled westward to mark the trails?  Now that Avery is just months from coming home, I feel such an urge to get stuff done.  I am sure with 2 children age 2 it is going to be crazy around here, but I don't care because it is going to be so much fun!  I have Avery's bedroom almost finished.  I need to find pink sheets and some Chinese lanterns and a mattress.  I sent Avery a package for her birthday on the 19th using an on-line service called Red Threads.  They will send her a letter from us, a cake, a camera for her nannies to use to take photos of her, and a stuff animal.  I found her the cutest baby blanket on Etsy, and I bought her some clothes from Tea Collection.  Since she is much smaller than Addy and her birthday is just a couple months behind I don't have very many clothes that will fit her for the Winter Season.  I am totally nesting right now!  While she may not be in my belly, it is like I am pregnant.  The first year of this process I ate and gained 10 pounds which I now need to work off.  Now that we have seen her face, I am nesting!  I am so excited for this little girl to join our family.  I was also able to finish one of the blog books I need to order to get caught up on publishing our photos.  It really was a great weekend!  Well, I better go!  I have to go pick Addy up from Preschool!  Have a great week!

Away "Corner View"

Summer is my favorite time of year.  The smell of the ocean, the promise of roadtrips, and lazy days make for a perfect recipe for summer, and if you are like me you are spending much of that time outside.  As many of you who have been following me for a while know every Wednesday I participate in what's called Corner View.  Cornerview orginally started by Jane in Spain and now continued by Francesca in Italy is a weekly participation of bloggers from around the world where we share our view from our corner of the world.  Each week we have a theme.  This weeks theme is Away.   Corner view took a break for the summer, and so I thought while many of you know our big news many of my corner view friends haven't heard the news-We have a baby.  We were referred a file of a little girl on August 19th and we accepted.  Her name is Xin Jing and we will name her Avery Elizabeth  see this post for more information http://travelingbugwiththreeboys-kelleyn.blogspot.com/2013/08/our-baby.html.  I also thought I would share this adorable video we have with the rest of you!  I can't stop watching it and I am busy preparing for the day when we can fly over to China and pick her up!  Welcome back everyone!  Can't wait to see what you have been doing over the summer.

Live, Breath, Beach

The thought of sunny weather at the beach was just too much.  The beach was calling me to come visit with every waves that crashed against it's shore, and so at the last minute I booked a hotel, packed up the kids and bags, and then called my mom and said,"Let's go to the beach."  She was game!  We headed to the Charleston, South Carolina  area where we ate lunch at the Cherrywood Barbecue Grill located on Kiawah Island.  The food was good, but over priced and the service was a little slow.  Then we headed to Folly Beach where the kids jumped the waves and played in the sand.  We were gone for only 27 hours, but it was so worth it to be able to smell the salt water and hear the sound of the waves crash against the shore.  Some may think I am crazy, but I love the beach!  I feel ready for fall now!
