Chocolate Chip Coconut Macaroons.
While these are not your French Macaroons that have become all the rage. I think these Chocolate Chip Coconut Macaroons are equally to die for; especially if you like the combination of coconut and chocolate. I make these cookies every spring, but this year I tried a new recipe that uses condensed milk instead of sugar, and has you whip the egg whites, and by doing this the cookies come out especially moist. The recipe comes from Ina Garten of the Barefoot Contessa. The chocolate chips are my addition because as you know I love chocolate. To all my Cornerview friends- Happy Anniversary! Chocolate Chip Coconut Macaroons
14 ounces of sweetened condensed milk
14 ounces of shredded sweetened coconut
1/4 teaspoon salt
2 large egg whites whipped
1 teaspoon of vanilla extract
1 cup of chocolate chips.
add milk to coconut with vanilla
and salt then fold in egg whites.
add chocolate chips and then with a small ice cream
scoop place on parchment lined cookie sheets.
Bake at 325 degrees for 25-30 minutes until golden brown.

What a yummy temptation! They sound easy to make. I love chocolate too, so I'd definitely add the chocolate chips.
re: agave nectar
you can substitute it in recipes for sugar. for each cup of sugar called for in a recipe, you will use 2/3 c. of agave. it doesn't have the same flavor at all that honey has. you'll have to taste it for yourself to see, but the taste is very pleasant.
it is great, for instance, in iced tea or coffee, etc because it dissolves easily. it works well in most recipes but does sometimes change the texture of baked goods.
because it has lower on the glycemic index, it is considered a much more healthful sweetener for your body.
the thing is, though, it IS expensive and comes from mexico (from cacti). i prefer to use local honey- also expensive but at least not shipped all the way from another country.
