Orange Beef
Do you ever get tired of eating the same things? If you are like me, maybe you have 15-20 recipes you know by heart and when planning meals you tend to gravitate towards those recipes. I get tired of eating the same things, but it isn't always easy trying new recipes. You have to sometimes buy ingredients you don't have in your pantry. What if the family doesn't like the recipes. Well, I tried a new recipe out last week and my family loves it. The plates were licked clean. Try it I think you will agree that this is one delish recipe!!!!!!
Orange Beef with Coconut Rice
1/4 cup of light soy sauce
1/4 cup rice vinegar
1 Tablespoon of olive oil/can also use sesame oil
1 teaspoon of ginger
1 teaspoon of coriander/cilantro
1 orange
4 cloves of Garlic
2-4 teaspoons of chili powder
1 1/2 pounds of flank steak
In the blender combine all ingredients and pulse until orange is broken down. Place with beef in Ziploc bag and marinade for a least 1/2 hour, but best overnight.
Cut meat on a diagonal in long strips and thread on bamboo skewers that have soaked in water for at least 30 minutes. Cook on hot grill 3-4 minutes on each side.
Coconut Rice
1 1/4 cups of your favorite rice
1 can of light coconut milk
1 cup water
1 Tablespoon of sugar
1 teaspoon of salt
1 Tablespoon of rice vinegar
1 handful of chopped green onions
optional 1/2 cup of defrosted and microwaved peas
In a pot combine rice, milk, water, sugar, salt, and vinegar. Bring to a boil stirring often, so that it doesn't stick to the bottom of the pan and burn. Once it comes to a boil turn down heat to low and cover with a lid. Cooks about in about 15 minutes. Look at it to see all the liquid is evaporated. Then fluff with a fork and toss in green onions and cooked peas.
