M is for menu "Corner View"

What do you get when you put a pregnant lady together with the very hot weather? A summer menu that is fast and easy to make. Today it is supposed to be 95 degrees. After I get my hair cut and colored, I am going to spend the rest of the day by the pool eating Italian Ice and Watermelon. Anyway, the other night I made this yummy pasta. It is so simple. I found the recipe on Smitten Kitchen a couple of years ago. Boil some pasta. I choose angel hair because it cooks faster. Then in a bowl mix one package of Boursin cheese (you could use goat if you like) with 2 Tablespoons of olive oil and a Tablespoon of hot water from the pot. Mix until creamy. Drain pasta and add to the bowl. Add salt and pepper along with a couple tablespoons of lemon zest, toasted pine nuts, and some chopped parsley, and wham bam thank you, mam, you have a light fantastic summer dinner within minutes.

Sounds great! I've used Boursin before, but i think adding the oil and water to the cheese is a great idea. Love the pine nuts too. Maybe I'll give it a try this weekend.
