This weekend

This weekend was pretty awesome. It started with a Girls Night Out through my church where we had a craft night. I made these beautiful coasters to give away to my children's teachers. Afterward, some of us girls headed over to the movies to see that movie with Katherine Heigl and Josh Duhamel with the added bonus of Josh Lucas in Life As We Know It. It was much better than I thought it would be. Saturday, I took the boys to German School and then went to a photography class with a good friend and local family photographer. I learned so much and can't wait to put my skill to the test. Sunday was another gorgeous day. The boys went on a walk with their dad and then we all went to church. Dinner couldn't have been more perfect. We invited some of my husbands to work colleagues over and sat outside on our deck. I made Fettuccine with a pumpkin sauce and pine nuts, grilled Angus steaks with cracked black pepper, a simple salad with balsamic vinegar, and for dessert apple crumble made with the apples with picked last weekend at the apple farm. The children even loved the pasta. Go figure! They were angels too as the played outside with some of the neighbor kids touch football.

Pumpkin Sauce
In a saute pan in 2 Tablespoons of olive oil saute 1/2 very finely diced white onion. When that begins to turn translucent add 1 Tablespoon of chopped rosemary and 1 garlic clove minced. The add 1 can or 15 ounces of pumpkin puree, 1 Tablespoon of white wine vinegar (but could use chicken stock or just white wine), 1/2 cup of 1/2 and 1/2 and 1/3 cup of Parmesan cheese. Salt and pepper to taste or you could use red pepper flakes. I used toasted pine nuts to dress it up and give it another dimension. You could also serve this with Sweet Italian sausage, but since we were having steak I thought it would be too much. Serve over your favorite type of noodles.
