Maple meets Pumpkin

It has been raining here in Georgia much more than usual for this time of year. We have had some flooding around the city, but I am thankful it hasn't affected our house. Strange to think that we have been in a drought for the last couple of years. A sure sign of fall is pumpkin bread. Yummy! This year I took it to the max by adding maple frosting. To die for is all I can say.


Pumpkin Bread
3 1/2 cups flour
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon nutmeg
3 cups sugar
1 cup oil
4 eggs
2 cups canned pumpkin
1/2 cup chopped pecans

Frosting
1 cup powder sugar
4 tablespoons maple syrup
1. Preheat oven to 350 degrees.
2. Mix all ingredients.
3. Pour into two greased bread pans.
4. Bake for one hour or until tester stick comes out dry.
5. Mix Frosting ingredients together and spoon over bread once it is cooled.

This looks delicious! I even have a can of pumpkin left in my American stock! I am going to have to try this and the pumpkin soup!

Yummy and fun to make! How does does your German husband handle all the gooey, sticky icing? My husband loves carrot cake, but always gives the icing to me... how lucky!
