A Constant Struggle



I don't know about you, but eating healthy is a constant struggle.  I mean with 8 people in our family and so many likes and dislikes it is hard to find food that we all like and if we all like it then it isn't something that is extremely healthy.  My husband eats mostly paleo, but is not a big salad person. My kids aren't big fans of salad either but do love cucumbers.  I think you get the picture. Anyways, the other day this recipe for this salad came across my feed and I thought it looked pretty good, so I gave it a go. My husband even liked it too!  I did make a few changes to the orignial recipe  just because I am not a big fan of Kale and also because I couldn't find any barley at the store. Enjoy!  Hope you like this salad as much as I did!

Mixed Greens, Brown Rice and Quinoa, and Feta Salad
4 cups of salad
1 1/2 cups of brown rice with quinoa cooked.  (I cheated and bought one of those 90 second microwave bags of rice in the grocery story)
1 cup of chickpeas
1/3 cup of feta
1/4 of a red onion chopped
1/4 cup of Sunflower seeds
1 avocado diced into chunks

dressing:
2 teaspoons of honey
1 teaspoon of fresh lemon juice
1/2 teaspoon of lemon zest
salt and pepper to taste
2 tablespoons of olive oil
2 tablespoon of white vinegar

Place the items for the dressing in a bowl and whisk together or my favorite way to make dressing is to put the ingredients in a mason jar with the lid and shake until you can tell the ingredients and really come together.

In Holland they were very strict with food when my kids were little: you eat what's on the table or you go hungry.
Wow, these ingredients look extremely healthy! I found a recipe with kale and butternut squash (I think), and you really couldn't taste the kale in it - tasted more like lettuce - when I think of it I'll send you the recipe! Missing you at ALL SEASONS...hope I didn't startle you with my email.
I was just thinking a very good thing happened to me health wise and hoped it would inspire you, but you don't have to react to it - all is still the same between us:):)

This sounds good! We love feta. That's the challenge, isn't it, to get everybody liking the same thing? I just tell them that I don't run a restaurant and they either eat what I put on the table or they go without Or they cook their own.

Sounds good Kelly -- I had a salad today that was couscous (not the instant kind) shrimp, feta, spinach and some dressing; I wish I would have asked the restaurant for the recipe..... Salads are really what we like a lot of the time here in the subtropics. (Although it is kind of chilly for Florida here today).

Mmmm.... I just happened to come over to your blog as I was eating a hot cross bun loaded with butter and honey - naughty.
I used to eat only vegetables and fish for about eight years and felt much healthier than I do now. I think your blog post is a little message to me to cut down on fattening foods :-)
That looks positively delish! Eating healthy is a challenge. I start off with good intentions and have a salad. I pat myself on the back and then reach for the chocolate chip cookies. Hope you're having a great weekend!!

Your salad sounds good. I love salad but not my hubby. So I seldom make salad at home. If I have the chance, I will eat salad when eating out. I am now following you on G+.

Sounds like a salad I would like. I'm trying to get more healthy and heart healthy as well as shed some pounds. Thanks so much for sharing. Printing off so I can try. My daughter just recently clued me into the benefits of quinoa. I made it and added to my salads. But, even though only hubby and I now with kids all gone with their own families, he doesn't like my salads that well so it is hard to not have to have two menus. I'm lucky though as he's easy and a sandwich and chips is the love of his life. haha
