Pumpkin Waffles


Pumpkins Waffles
Pumpkin Gingerbread Waffles

1 1/2 cups whole wheat flour
2 teaspoons baking powder
1 teaspoon ginger
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon salt
1 cup pumpkin
1 1/4 cups milk
1/4 cup melted butter (or coconut oil)
1 egg
3 tablespoons molasses
1 teaspoon vanilla

Mix the dry ingredients together in a large bowl with a whisk. Add the wet ingredients and combine. Cook on a preheated waffle iron until nice and crisp. I put my waffle iron on almost the highest setting. I think pumpkin makes things cook slower, so if you want them crisp, they almost need to be overcooked.

Serve with spiced whipped cream or good old maple syrup (and lots of butter, of course).

This recipe makes 4 or 5 Belgian waffles.

Fall has finally arrived in Georgia as the temperatures have dipped into the 40's and we are all wearing sweaters and boots.  The trees are glorious this week and the fireplace has been turned on and boy do I love to sit by it as I can't think of anything better to do. This past weekend I went to the movies with my mom and we saw If I Stay.  Such a good movie! Avery and I also went to get a pedicure.  I picked a dark red almost burgundy color.  Poor Winston almost froze during his soccer game along with papa on the sidelines.  As usual, things are busy around here!  I hope you had a great weekend.  If you are looking for a great pumpkin recipe try these waffles.  So yummy!  Perfect for a Sunday morning.

i love all recipes that include pumpkin in the ingredients! i have three pumpkins right now, but they're so pretty that i can't bring myself to cut them ... perhaps when we get really, really hungry :)
