Focaccia

This photo doesn't do the Focaccia justice!  Wish I had gotten the big gun camera out!  This recipe is so easy and the bread is so good!  The children loved it!  Yummy!

Ingredients
3 cups flour
1 cup water
15 g instant yeast
1/2 cup olive oil
1 tsp salt
1 tbsp granulated sugar
2 small cloves of garlic
Fresh thyme

Instructions
Preheat the oven to 300 F.
Combine the warm water, yeast, and sugar in a small bowl. Put the bowl in a warm (not hot nor cool) place until the yeast is bubbling, for at least 10 minutes.
Take the flour into a large mixing bowl. Pour the activated yeast water into the center of the flour. Add olive oil, salt, and sugar and mix.
When the dough starts to gather, place the dough on the counter and knead the dough for about 10 minutes.
Shape the dough into a round ball with your hands, take a deep glass bowl, put the dough in, and cover it with plastic wrap.
Deflate the dough twice at 30-minute intervals, knead it again, and cover it.
In the last round, add the spices and grated garlic to the dough, and knead the dough one last time.
Cover the tray with 2-3 tbsp olive oil take the dough into the tray and spread it with your hands.
Punch down the dough with your fingertips after 15 minutes and spread the dough on the whole tray. Add some more olive oil to it, flavor it with the ingredients of your choice, and cook for 30 minutes.

Dearest Kelleyn,
Good for you that everyone loved it; that is a double bonus aside from being easy to make!

The first time I had that was at a bakery in Ontario's cottage country.
