Rainy Day Blues and Thai Chicken Stew



As I look out my living room window, the copper leaves hanging unto the trees are blowing in the wind. The sky is grey with giant clouds hovering over the houses though in the distance I can see blue sky.  It rained this morning and Ivy and I are hanging out at the house today as she woke up with a fever.  I need to go to the music store to return a guitar that accidentally came to my house instead of the keyboard I ordered for Adelaide.  I don't really want to go.  Feeling kind of blue today. Feeling frustrated as it seem like each day the plans I have to go to the gym seem to get pushed to the side because a child is sick  or other urgent matters.  I guess I just need to hang in there as I know this is just a phase in life, but still frustrating none the less. On another note, I do feel good about the 5 bags of clothes I took to the Goodwill this morning. I cleaned out my closet and the girls closet and both look so much better.  I also made a lovely Thai Chicken Stew.  So yummy! Not difficult to make either.  Found the recipe via Donal Skehan.  A note of caution if you watch the video the recipe is different than the one posted on the blog.  I would not recommend adding the chicken stock as it made for too much liquid in the dish. Oh, and just for those of you wondering Harris got a differed acceptance to GA Tech.  This means he can reapply in 2018 after completing 30 credits from another credited school.  Harris is depressed.  He really wanted to go in the fall.  At least it wasn't a complete no.  Not sure what he is going to do now.  He got acceptance to UGA but doesn't want to go there.  I think he is going to apply to another couple schools, so the waiting game continues.

That chicken dish looks yummy! I've only had Thai food once and it wasn't a good experience, but maybe it's time to try it again.

I know exactly how you feel! Each day I tell myself that today after work I'm going to work on my paintings and each day something happens that demands my attention.

As much as I love my family, some days I really wish they would all just take a vacation together for a month and leave me alone to just fend for myself! Maybe I should send them off on a cruise without me? :)
