You are My Sunshine!
Aren't these gorgeous! I think in the craze of cake pops, cupcakes, and whoopie pies the Lemon Bar has been forgotten. I think it is time to resurrect it from its grave. Today I am having a party for all my friends. I can't think of a better way to celebrate Valentines Day than with your friends.
You are My Sunshine Lemon Bars
1 Cup of butter softened
1/2 cup of confectioner's sugar
1 Teaspoon of vanilla
2 cups of flour
4 eggs
2 cups of granulated sugar
zest of one lemon
6 Tablespoons of lemon juice (about 3 lemons)
1/4 cup of confectioners sugar for dusting the tops of the bars
Preheat oven to 350 degrees
grease an 8 by 11 pan with butter and line with parchment paper
In a bowl mix flour, butter, confectioners sugar, and vanilla
Press in the pan and with a fork poke dots into the mixture
Bake for 20 minutes.
Then mix eggs, sugar, lemon juice, and zest together pour over dough and bake for another 20 minutes or until golden brown. Cool, dust with confectioners sugar, and cut into bars.
