Homemade Pasta
Today we woke up to a massive rain storm which was surprising because the weather report said it was going to clear up by the weekend. I can't really complain as we have enjoyed over a month of good weather and other states are getting slammed with rain and are flooding. I had planned on taking the kids to the botanical garden after piano. The piano lessons fell through as well because the teacher wasn't feeling well. I don't blame her as who wants to go out in a huge rainstorm. So we switched gears and got out the workbooks and did a little math, did some arts and crafts, and then on a whim, I decided it would be fun to try making homemade pasta as seen one of those cooking videos posted on Facebook. Addy was determined to be my cooking buddy. She cracked the eggs and helped need the dough. When it was all down the results were pretty tasty. The perfectionist in me wanted the noodles to look uniform, but it didn't matter to the children. They gobbled up the pasta and asked for more. Afterwards, we put on our shoes and headed to get ice cream at Andy's. So yummy! While I am not sure I would make these again for the kids, I would definitely do it for my sweet husband. Maybe, we will make these for him for Father's Day. He deserves a special treat. He works so hard to take care of us emotionally, physically, and is a great husband and father.
Step 1 to making pasta 2 cups of 00 flour, a pinch of salt, three eggs and 5 yokes, and a tablespoon of olive oil. Add salt to the flour.
Step 2 Whisk eggs and oil together. I forgot to do this, but it still worked out.
Step 3 Dump out flour on the counter and create a well and pour the eggs into the centre. Slowly bring the flour into eggs.
Step 4 knead the dough for about 10 minutes until nice and smooth and the dough bounces back when poked with a finger. If sticky add a little flour if drink sprinkle with a little water.
dust dough with flour and cover with a towel. let rest for 30 -60 minutes to give the gluten a chance to rest.
Step 5 cut dough into 8 equal pieces
Step 6 roll out the dough and once it is so thin you can read a love letter through or see your hand then gently fold it back onto itself loosely and cut into strips. dust stips with flour lightly to keep from sticking together.
Step 7 boil in a pot of salted boiling water. Takes about 3 minutes and serves with your favourite sauce. Then enjoy! Video can be found on Youtube under how to make homemade pasta by Tasty.
