Apple Walnut with Broiled Brussels Sprout Salad
I think I am seriously addicted to Brussels Sprouts now! If you remember, I told you a while back I hadn't really eaten them growing up but had tried them in a salad and thought they weren't so bad. Since then I have tried a few recipes and have grown rather fond of them. When my girlfriends came to visit at the end of last month it was a perfect opportunity to try out this wonderful recipe. It did not disappoint. I mean anything that has bacon in the recipe can't be too bad.
In a skillet fry up 5 pieces of bacon, remove the bacon from the pan and after patting the bacon dry to remove excess grease chop up into bite-size pieces. Then in that same pan add 1 minced shallot, 3/4 cup chopped walnut and 1 diced up gala or Braeburn apple. After the apple begins to become tender add a couple tablespoons of red wine vinegar and a 1/4 cup olive oil. This mixture will be finished when the apples are soft but still have a bit of crunch to them. Set aside and then in a baking dish bake at 375-degree cook 20-25 washed and halved Brussels Sprouts that have been gently tossed in olive oil. Salt and pepper to taste. When the sprouts are tender toss together with the bacon and apple walnut mixture. Seriously yum! Pairs well with a roasted pork tenderloin or a baked chicken.

Never knew what to do with Brussels Sprouts, because they have a bitter taste when boiled.
What I do now, is I fry bacon - remove, and sautee a little garlic lightly and remove them - then sautee the halved Brussels Sprouts in the grease of the bacon (turn sprouts both sides) then put fire on low and add 1/2 cup of water and simmer for approx. 15 min.) slice the bacon and put them on sprouts when done. Eat with potatoes and meat or other vegetable). Delicious on a cold day.
