Hard to believe, but child number 2 turned 18 this week.  I can't believe I am the mother of two adults.  How is that possible, but I guess it is true.  We celebrated at home with just our family. We aren't ready to introduce new people into our little safe circle at the moment. but it is coming soon.  I made him this Swiss Roll cake.  It was so delicious.  The children loved it.  It was chocolate with a whipped cream center.  I can't believe how easy it was to make.  You take 4 eggs and beat them till light and airy for 4 minutes.  In another bowl mix, 4 ounces of melted chocolate with 6Tbls of butter with 1 cup of sugar add to this 1/4 cup of flour with 1/2 teaspoon of baking soda and then combine with eggs.  Gradually add in the 3/4 cup flour alternating with 2/3 cup of water.  Mix until all combined.  Then pour mixture onto a greased and parchment-lined baking sheet that is 15 by 10 by 1. I just used the one I had and ended up trimming the ends a little.  Bake for 15 minutes or until done which could be less if your cookie sheet is large like mine is and at 350 degrees.  Allow to cool and then place another piece fo parchment paper on the top and flip over.  The room the other piece of parchment paper that the cake had baked on.  Then roll gently and set to completely cool either in the fridge or on the counter for an hour.  After an hour whip up some whipped cream with a little vanilla, sugar, and some gelatin.  I just used a teaspoon.  You can stabilize the cream with cornstarch too if you don't have gelatin. After an hour unroll the cake and spread on the whipped cream mixture.  roll back up again this time removing paper and place on a plate.  In a bowl melt 8 ounces of chocolate chips with 8 ounces of heated cream.   Mix until chips are completely melted and smooth. Pour over cake and place in the fridge for another 15 minutes until chocolate has set.  Enjoy!
