Pacific Grilled Citrus Salmon with Mixed Green Berry Salad

Pacific Grilled Citrus Salmon
1 1/2 tablespoons freshly-squeezed lemon juice
2 tablespoons olive oil
1 tablespoon butter
1 tablespoon Dijon mustard
4 garlic cloves, minced
1 teaspoon dried basil
2 teaspoons capers
1 teaspoon dried dill
3 pounds of fresh salmon fillets

Place salmon on aluminum foil skin side down. In a sauce pan mix all other ingredients over medium heat until sauce is melted-then pour over the top of salmon. Then fold foil so that it creates a packet. Cook in oven at 350 degrees for 15-20 minutes or until salmon is cook through. Should be flaky and light pink in color when cooked. This can also be done on a Barbecue for 10-12 minutes. Recipe serves 6. Recipe adapted from Portland's Palate a Junior League Cook Book.

Salad

Use any combination of mixed greens or romaine lettuce then add raspberries, blackberries, walnuts, and pineapple.

Poppy Seed Dressing

1/3 cup white sugar or 1/3 cup honey
1 cup vegetable oil
1 tablespoon poppy seeds
1/2 cup vinegar
1 teaspoon salt
1 teaspoon ground dry mustard
1 teaspoon grated onion

In a bowl whisk together wet ingredients then add dry ingredients one by one. This can also be made in a blender. Recipe from all recipes.com

Tonight I am in heaven. Nothing says summer more than eating outside on our deck, and watching the fireflies dance amongst the trees. I love the way the sun sparkles off the leaves as they wave in the breeze. Nothing is more refreshing than salmon and salad. I don't think it could have been a more perfect evening! I am blessed!
