Waffles Keto Style
Hi! Happy Friday! Do you have any plans for the weekend? My 7 year old thinks we need to do something all the time. She told me that on Mondays she has to report what she did over the weekend and that she never has anything good to report because she only goes to German school. This is coming from a child who has already been to about 10 countries and about 30 states in the United States. Poor girl, she has such a horrible life. I am trying to do less right now because I am trying to teach them the art of being bored. I have to say I am seriously guilty of over-scheduling my children's lives. I am not sure what she is talking about though because last weekend I took them to see the movie Wonder Park and the weekend before that we went to Nashville to play with our friends from our adoption community. A reader asked me about Keto or the Keto diet. I really can't explain it as I am not an expert on the subject, but from my basic understanding is that the majority of one's calories come from fat, the protein, then carbs. The ides if we eliminate the carbs out of our diet that our bodies will begin to burn fat. Now why you add fat is more complicated, I have seen others use the diet and it works for them. This is an example of today's menu. Breakfast I ate a sausage patty ad a scrambled egg. Then after going to the gym, I had a chocolate peanut butter smoothie and for dinner, I had chicken biryani served on a bed of cauliflower rice with zucchini and onions. I haven't gotten on the scale yet, but just after a couple days of eating this way I am starting to feel much better with increased energy. I will say that sugar cravings are brutal. Well, I better run. I need to practice piano with the girls and then we need to sit down and do homework for German school tomorrow. Hope you have a great weekend!
Keto Waffles
4 eggs
4 Tablespoons of almond or coconut flour
a pinch of salt
a teaspoon of vanilla
a 1/4 teaspoon of cinnamon
4 ounces of softened cream cheese
Place all items in a blender- I use my bullet and blend to all ingredients are incorporated. Then spray your waffle machine with a low-calorie cooking spray or wipe with coconut oil. These make about 3 waffles. top with a very small amount of berries and sugar-free whip cream then drizzle with sugar-free syrup. Enjoy!

The recipe is interesting - 4 eggs! And only 4 tablespoons of flour - that could get expensive (since I eat waffles almost every day - so that's 35 eggs in 7 days:)) But, if you can do it and it works for you - that is great! People keep asking me if I'm on the Keto diet and all I took away from what I briefly read was that it had something to do with carbs. I do know that I shouldn't be eating that kind of breakfast but I am having an energy issue so who knows and good luck, I look forward to seeing how it goes for you.
